Locust Bean Gum (E410):
Locust Bean Gum is a galactomannan vegetable gum obtained from the seeds of the carob tree and is used as thickening agent (gelling agent) in food application.

The bean, when converted into powder has a sweet flavour similar to chocolate and is used to sweeten foods and as a substitute for chocolate.

This carob powder is produced from the fruit pod after removing the seeds of Locust Gum, while the gum is produced from the seeds themselves.

Locust Bean Gum is also used in pet foods. Also have Locust Bean Gum powder as an additive. It is soluble in hot water. Locust Bean Gum is used in various application industries as thickening agent and gelling agent.

Application

Food Industry: Locust Bean Gum powder as food additives has been conducted and has been authorized under the E410 category. The Locust Bean Gum acts as a hydrocolloid. Hydrocolloid is a substance that keeps water molecules stick together. This cohesive property makes it useful in thickening and gelling process during food processing.
